Piepa Cleary’s Hazelnut Energy Ball.
“My favourite before-training snack is a Hazelnut Energy Ball. I will normally make a batch of these once a week. They’re a great snack because they’re super tasty, very healthy and also very filling!”
What you’ll need:
1 cup of Hazelnuts
1 cup of dates
½ cup Macadamia nuts
1 tablespoon cocoa powder
1 tablespoon of honey
Dessicated coconut – however much you’d like
1 tablespoon flaxseeds
Method:
- Throw the hazelnuts, macadamia’s and flaxseeds in a food processor until finely ground. Empty the processed nuts into a bowl.
- Put your dates in the food processor, making sure they have all their pits removed. Process them until they’re stuck together. Put the processed dates into the bowl with the nuts.
- Add the cocoa powder to the date and nut mixture, and work it in with your hands.
- Add the honey and coconut. Mix and knead it all together until combined.
- Roll the mixture into small balls, however large you would like. Sprinkle some extra coconut over the top (optional) and set aside in the fridge until they set.
- They can stay stored in the fridge for up to 8 days so you can enjoy them all week long.
